How to Make Leftovers into a Revitalized, New Meal
Intrigued? Me too. This morning while I was sipping on my lemon water (with a twist), I decided I was sick of having my Maple Butternut Apple Squash with Rice as a leftover. So I decided to throw it out.

BUT THEN - I rememered I'm trying really hard not to waste any food. So I got creative. Here's how I turned that delicious rice recipe into a hearty and spicy soup.
In a large pot, add 1 tbsp of olive oil with minced garlic, and three celery stocks chopped. Sautee for a few minutes.
Then add the leftovers of your rice mixture with 1 vegetable bouillon, 4 cups of water and the following spices:
1 tsp cinnamon
1 tsp turmeric
1 tsp onion powder
2 tsp Mrs. Dash Chipotle seasoning
1 tsp cayenne pepper (or to taste)
a pinch of pepper
Bring to a boil.

Once it's boiling, reduce heat and add two HEAPING handfuls of baby spinach. Why? Because greens are good for you, and spinach goes well with everything. Duh.
Simmer for a few more minutes, and then you are good to go! A whole new meal out of another one. NO WASTING.
